About this place
At the ticket machine at Chuka Hiten, the first choice is whether to go for a generously topped bowl or dipping noodles. One of the restaurant’s signature dishes, Kakufuji, pairs thick noodles with a generous mound of bean sprouts, in a sweet-leaning pork broth given a punch of garlic. Variations include miso, spicy and salt versions, each offering a substantial bowl with a different flavour profile.
Another favourite is the tantan dipping noodles, distinguished by rich sesame flavour and a sweet-and-spicy taste. The dipping broth clings to the thick noodles; a special version adds nori, chashu pork and a seasoned egg, while a popular topping for the hot noodles is a raw egg. Half a portion of rice makes a satisfying finish, stirred into the remaining broth once the noodles are gone.
The calm dining room is centred around counter seating, making it well suited to a solo meal. Orders are placed using a ticket machine, and payment is cash only. There is also a free car park behind the restaurant.
